 White Chocolate Amaretto Recipes Wind & Willow products are outstanding on their own, but they also serve as a base for many terrific recipes. Each month we will feature some of our favorites. Our featured flavor - White Chocolate Amaretto Cheesecake Rolled in sliced almonds that come right in the mix, this is a perennial favorite. It adds real pizzazz to many recipes as well! -------------------------------------------------------------------------------- Amaretto Baked Custard INGREDIENTS: Wind & Willow White Chocolate Amaretto Cheesecake Cheeseball & Dessert Mix 2 c. milk 3 large eggs 1 tsp vanilla Ground nutmeg or cardamom, optional DIRECTIONS: Preheat oven to 325 degrees; spray six custard cups with oil and set in 13 x 9 pan. Mix contents of White Chocolate Amaretto Cheesecake packet, milk, eggs and vanilla in blender until well blended. Pour into prepared custard cups. Pour boiling water into 13 x 9 pan to depth of an inch. Bake 10 minutes; divide almond topping among custard cups and sprinkle with spice if desired. Continue baking 20 minutes or until custard is set. -------------------------------------------------------------------------------- Amaretto Bowl Bagel Spread DIRECTIONS: For a quick idea that will have your guests talking, simply make the White Chocolate Amaretto Cheeseball as directed. When finished, gently press an indention in the top making a bowl. Fill the “bowl” with apricot preserves. Serve with bagels for a spectacular additional to your brunch or breakfast table. Makes 8 servings. -------------------------------------------------------------------------------- Amaretto Brownies INGREDIENTS: White Chocolate Amaretto Mix 8 oz cream cheese 1 boxed brownie mix (add ingredients as directed) DIRECTIONS: Combine White Chocolate Amaretto Mix, cream cheese and butter and mix until smooth. Prepare the brownies as indicated on the box and replace with: pour about 3/4 of brownie mixture in a lightly greased 8 X 8” baking pan. Spoon White Chocolate mixture over top. Top with remaining brownie mixture and sprinkle with almond topping. Bake as directed on brownie box. Makes rich fudgy brownies. Top with a scoop of ice cream and hot fudge sauce for a quick and delicious treat. INGREDIENTS: 1 Wind & Willow White Chocolate Amaretto Cheesecake Cheeseball Mix 1 Boxed Brownie Mix DIRECTIONS: Simply mix the brownies as directed and stir in the White Chocolate Amaretto Mix. Top with Almond Topping and bake as directed. It's easy to take brownies and make them a very special dessert! -------------------------------------------------------------------------------- Amaretto Dessert Topping: Make every day treats into elegant desserts! INGREDIENTS: 1 Wind & Willow White Chocolate Amaretto Cheesecake Cheeseball Mix 4 oz cream cheese 1/2 cup sour cream DIRECTIONS: Over low heating stirring constantly, melt together 4 oz of cream cheese, 1/2 cup of sour cream and White Chocolate Amaretto Mix. Drizzle over cake, pie, cheesecake, fruit salads, or brownies (try Wind & Willow Amaretto Brownies!) and sprinkle with almond topping. -------------------------------------------------------------------------------- Amaretto Snap Cheesecake INGREDIENTS: 1 cup crushed ginger snap cookies (crush in food processor 4 Tbs. melted butter 2 Tbs. sugar White Chocolate Amaretto Mix 8 oz cream cheese 2 Tbs. butter 8 oz carton of prepared whipped topping DIRECTIONS: Pre-heat oven to 350. Combine crushed cookies, melted butter and sugar in 8 inch pie plate. Press into bottom and sides of pie plate. Bake for 8 to 10 minutes. Let cool. Combine White Chocolate Amaretto Mix with cream cheese and butter. Stir until smooth. Fold in 8 oz prepared whipped topping and pour into prepared ginger snap crust. Garnish with almond Topping. Chill until ready to serve. Makes 8 servings. -------------------------------------------------------------------------------- Black & White Pizza - Pizza dressed for grown-ups DIRECTIONS: Spread refrigerated sugar or chocolate cookie dough on a pizza pan and bake as directed until lightly browned. Cool. Combine White Chocolate Amaretto Mix with cream cheese and butter. Spread on baked cookie crust. Drizzle with chocolate or fudge sauce, add shaved chocolate or chocolate Chips and Almond Topping. Refrigerate until ready to serve. Makes 6-8 servings. -------------------------------------------------------------------------------- In the Kitchen You Can Build a Snowman . . . . Hey, no need to go all the way out to the meadow and this one tastes better! INGREDIENTS: White Chocolate Amaretto Cheeseball Mix 12 oz cream cheese Your choice of edible pieces for decorating (mini m&m’s, mini choc chips, raisins, pretzels, fruit roll ups - you can cut out strips for scarves or hats) DIRECTIONS: Combine White Chocolate Amaretto Mix and cream cheese. Chill until firm. Divide into 3 balls (small, medium and large). Cover with plastic and chill in freezer for 30 minutes (At this point, the balls may be frozen for several days in sealed plastic bags until you are ready to use them). Assemble the balls with the largest on bottom to build a snowman. You may need to flatten bottom of balls to make them more stable. You can also use half a pretzel stick between the balls to help hold them together as well. Dress your snowman! Use pretzels for arms and mini chips for eyes and mouth. Cut up fruit roll up for scarf. Sprinkle the last few leaves of the season (Almond Topping) around base of snowman! Serve with ginger snaps or sugar cookies. Makes 8 servings. -------------------------------------------------------------------------------- Layered Brownie Dessert INGREDIENTS: White Chocolate Amaretto Mix 8 oz cream cheese 4 Tbs. butter Prepared brownies (your recipe or prepare a boxed mix - DO NOT OVER BAKE! Cool and cut in approximately 2-1/2” squares) Chocolate Ice Cream Topping Prepared whipped cream topping DIRECTIONS: Combine White Chocolate Amaretto Mix, cream cheese, and butter. Use as a filling between 2 brownie squares. Drizzle Chocolate Sauce over the top. Top with Whipped cream and sprinkle with almond topping. Makes 8 servings. -------------------------------------------------------------------------------- Orange and Amaretto Crepes INGREDIENTS: 10-12 crepes (ready to use from the store or follow crepe recipe below) White Chocolate Amaretto Mix 8 oz cream cheese 4 Tbs. butter Orange and Amaretto sauce (see recipe below) DIRECTIONS: Combine White Chocolate Amaretto Mix with cream cheese and butter. Spread about 2 Tbs. on prepared crepe. Roll or fold crepe. Top with Orange and Amaretto sauce and sprinkle with Almond Topping. Makes 10 - 12 servings -------------------------------------------------------------------------------- Orange and Amaretto Recipe for Crepes INGREDIENTS: 3/4 c. flour 1/2 tablespoon sugar 1/4 teaspoon salt 1 cup milk (you may add 1 tablespoon of milk if you prefer a thinner batter) 1/2 teaspoon vanilla extract 1 egg 1 tablespoon butter or margarine, melted vegetable oil DIRECTIONS: Combine flour, sugar, salt, milk, and vanilla, beating until smooth. Add egg, and beat well: stir in butter. Brush bottom of a 6” crepe pan or heavy skillet with oil, place over medium heat. Pour 2 tablespoons batter into pan: quickly tilt pan in all directions so batter covers pan in a thin film. Cook 1 minute or until lightly browned. Lift edge of crepe to test for doneness. When light brown, flip crepe and cook about 30 seconds on other side. Place crepes on a towel to cool. Stack between layers of waxed paper to prevent sticking. Yield about 1 dozen crepes. -------------------------------------------------------------------------------- Orange and Amaretto Sauce INGREDIENTS: 1/2 cup melted butter 1/2 cup sugar 1 tsp. cornstarch 1/2 cup orange juice 2 Tbs. Amaretto liqueur DIRECTIONS: Combine first 4 ingredients in a medium saucepan. Cook over low heat stirring constantly until sauce begins to thicken (will lightly coat the back of the spoon when removed from the sauce). Remove from heat. Stir in Amaretto liqueur. Serve. -------------------------------------------------------------------------------- Peach & Amaretto Parfait INGREDIENTS: White Chocolate Amaretto Mix 8 oz cream cheese 8 oz prepared whipped topping Angel food cake cut into bite size cubes Fresh peaches cut in small pieces DIRECTIONS: Combine White Chocolate Amaretto Mix with cream cheese. Mix until smooth. Fold in whipped topping. . In parfait glass start with a layer of the white chocolate mixture, add peaches, angel food cake and repeat layers ending with a layer of white chocolate mixture on top. Sprinkle with almond topping and top with a cherry. Makes 8 servings. -------------------------------------------------------------------------------- Personal Cheeseball Dessert Plate INGREDIENTS: White Chocolate Amaretto Cheeseball Mix 8 oz cream cheese 4 Tbs. butter Dessert or Ice Cream Topping Assorted Cookies and/or Fruit Slices DIRECTIONS: Combine White Chocolate Amaretto Mix, cream cheese and butter. Chill until firm. Divide into 6 balls and roll each in Almond Topping. . On Individual dessert plates, spoon or squeeze dessert topping on one side of the plate (try caramel or hot fudge ice cream topping or a combination of both). On the other side put a fan of 3 or 4 cookies, graham crackers, or fruit. Set the individual cheeseball in the center of the plate. Makes 6 servings. -------------------------------------------------------------------------------- Soft Peach & Amaretto Ice Cream INGREDIENTS: Wind & Willow White Chocolate Amaretto Cheesecake Cheeseball & Dessert Mix 16 oz. peach slices, frozen 12 oz. fat free evaporated milk, refrigerated cold DIRECTIONS: In a food processor with metal blade, combine cheeseball mix and frozen peach slices; churn 1 ˝ minutes then scrape down sides. With processor running, slowly pour in cold evaporated milk and churn until well blended, approximately 1 ˝ to 2 minutes. Spoon into dessert goblets and serve immediately. 6 servings. -------------------------------------------------------------------------------- Surprise Almond Puffs INGREDIENTS: 2 8-oz cans ready to bake biscuits White Chocolate Amaretto Cheeseball Mix 8oz cream cheese 4 Tbs. butter 4 Tbs. sugar 1 tsp. cinnamon DIRECTIONS: Combine White Chocolate Mix with cream cheese and butter. Roll each biscuit out to a flat circle with approximately 1/4 inch thickness. Combine sugar and cinnamon and sprinkle over each circle. In the center of each place 2 Tbs. of cream cheese mixture. Wrap biscuit around cream cheese mixture and roll ball in Almond Topping. . Place in a lightly greased muffin pan and sprinkle with cinnamon and sugar mixture. Bake at 350 for 10 - 15 minutes or until golden brown. Makes 16 servings. -------------------------------------------------------------------------------- White Chocolate Amaretto Dessert Nests INGREDIENTS: Wind & Willow White Chocolate Amaretto Cheesecake Cheeseball & Dessert Mix 1/2 small tub of Cool Whip Phyllo dough, one half package, thawed Butterscotch or caramel dessert sauce DIRECTIONS: Prepare Cheeseball & Dessert Mix with addition of 1/2 small tub of Cool Whip Spray each phyllo sheet with butter flavored cooking spray and stack. Cut into eight squares and press into muffin tin to form cups. Bake 10 min at 375 or until golden brown. Cool thoroughly. Divide cheeseball mixture among the phyllo cups and top with butterscotch or caramel sauce and sprinkle with sliced almonds from the mix. |
